  1. In a bowl, mix together the soy sauce, 1 oz of water, chopped garlic, olive oil and cracked black pepper.
  2. Marinate the chicken in the soy mixture for 30 minutes.
  3. Remove the chicken from the marinade. Spray the chicken with the pan coating.
  4. Place the skewers on a preheated grill. Grill the chicken for about 2 minutes on each side.
  5. After the chicken has been cooking for 4 minutes, brush with the Blackberry Balsamic Sauce.
  6. Place the lettuce to the side of the plate and top with the chicken skewers. 
  7. Drizzle remaining Blackberry Balsamic Sauce over the chicken and garnish with the fresh mango salsa.
