Recipe Instructions:
  1. Dice grannysmith apples into small sized dice.
  2. Dice lobster meat into small dice.
  3. Chop dill very fine and reserve.
  4. Chop ½ of the capers into small pieces.
  5. Add apples, lobster, crabmeat, dill, and capers together into a stainless steel bowl
    and fold together.
  6. Add salt and cracked black pepper to taste.
  7. Reserve lobster crab salad mixture.
  8. Mix together 1 oz heavy cream and raspberry puree and reserve for garnish.
  9. Place into a blender the horseradish, dill and remaining capers and blend until smooth.
  10. Add cream to the horseradish mixture and salt and pepper to taste.
  11. In a muffin tin, line the tin with the smoked salmon.
  12. Place the lobster and crab salad in the muffin tin.
  13. Fold over the salmon to cover the salad.
  14. Slice the english cucumber on a slicer; set on #2 for a very thin slice for garnish.
  15. To plate, turn salmon onto plate. Place horseradish sauce at bottom of salmon mold; place drops of raspberry sauce at the top of the salmon.
  16. Place slice of cucumber on top with one piece of crab and a sprig of fresh dill and flower.
