Recipe Instructions- Slice the tomatoes in half. Rinse and slice the squash on the bias. Shuck the corn and remove the kernels from the cob.
- Place the a pot of water on the stove and bring to a boil, add the ravioli to the boiling water and cook for 3-4 minutes.
- Dry and season the scallops with salt and pepper.
- Heat a saute pan over medium high heat, add the oil and then place the scallops in the pan.
- Cook the scallops for 2 minutes on each side. Add the bacon and the sliced onions to the pan.
- Next add the squash and cook for 1 minute.
- Add the corn, spinach and tomatoes. Continue to cook for 1 additional minute.
- Deglaze the pan with the wine and season with salt and pepper. Drain the pasta and toss with the sauce and mix in the butter.
- Arrange the spinach into 4 piles, place the ravioli in between them.
- In the center of the ravioli pour the scallop sauce.
- Garnish with Parmesan and serve.
