Recipe Instructions:

1. Mix the rice with the tomato sauce and 4 oz of water. Cook in the oven, steamer or on the stove until it is tender.

2. Heat the the beans on low until they are hot.

3. Mix the lobster with the corn and peppers. Place the mixture inside the enchilada and roll up.

4. Heat the cheese sauce on medium low until it is hot. Chop the peppers, cilantro, green onions, and parsley and mix with the sauce.

5. Steam the enchiladas for 2 minutes. Place the beans and rice on the plate. Place the enchiladas in the middle andtop with the sauce.

6. Garnish with 2 chives and crumble the cheese over the beans.
