Smoked Salmon & Poached Egg Stack

Recipe Instructions- Peel and thinly slice the red onion. Chop 1/2 of the chives and tarragon.
- Whisk together the sour cream and juice from 1 lemon. Add the oil in a slow stream, whisking until emulsified. Stir in the chives and tarragon, season with salt and pepper.
- Fill a small pot with 4 cups of water, add the vinegar, bring the water to a simmer.
- Break the egg into a cup and slide the egg into the simmering water. Poach egg at a bare simmer 3-4 minutes.
- When the white is set, transfer the egg with a slotted spoon. Season with salt and pepper.
- Layer the egg with a slice of smoked salmon.
- Slice the brioche, place the bread in the center of the plate, and top with a piece of lettuce.
- Slice the avocado into thin slices and lay on top of the lettuce, add the sliced onion, and top with the layered salmon and egg.
- Spoon the sauce over the egg and garnish with chopped chives.
